If you’re looking for a way to spice up your taco night, look no further than Mouthwatering Grilled Steak Tacos! These tacos are a fiesta of flavor, with juicy, smoky steak, fresh toppings, and bold seasonings. Perfect for Taco Tuesdays, Cinco de Mayo or any fiesta!
To start, choose a good cut of steak that is suitable for grilling, such as skirt steak, sirloin or flank steak. I prefer skirt steak, as it is thinner, cooks quickly and less chewy than flank steak. A good quality sirloin steak is also a great option. Season the steak with a mixture of spices, such as chili powder, cumin, paprika, coriander, basil, salt, and pepper. Squeeze the juice of 4 limes (you can always do more if you want more intense lime flavor), add in your chopped garlic cloves and drizzle olive oil over the spice rubbed steaks. Marinate your meat for at least 3 hours in the refrigerator.
While the steak is marinating, it’s time to prepare your favorite toppings. Place each ingredient in festive, individual bowls. This way, each person can customize the tacos as they wish. Separating each topping into Individual bowls also helps with any food allergies. Dice up fresh tomatoes, thinly slice romaine lettuce, rinse your beans and crumble your favorite cheese (I used mild queso fresco). If you like more of a kick, you can slice up some jalapeños and add some salsa (I used fresh mango salsa). Chop raw onions or caramelize them to add additional flavor. Avocados should be diced at the last minute so their color stays nice a green. Ideally, your toppings are ready to serve once the hot steak is ready.
Next, it’s time to fire up the grill! Heat up your grill to medium-high heat. Grill the steaks for a few minutes on each side, until it’s cooked to your desired doneness. The amount of grilling time will depend on the cut of meat.
Move grilled steaks to a cutting board to slice or dice. Based on your preference, you can slice your steaks thinly against the grain into strips or you can cut them into cubes. Your steak will be juicy and ready to pile onto your tortillas! Warm the corn tortillas on the grill or in the oven. Mouthwatering Grilled Steak Tacos
Ingredients
- 2 lbs. Skirt steak, trimmed
For Marinade:
- 4 Limes, plus additional for lime squeezes
- 2 Garlic cloves, chopped
- 2 tbsp. Olive oil
- 1 tsp. Ground coriander
- 1 tsp. Chili powder
- 1 tsp. Paprika
- 1/2 tsp. Basil
- 1/2 tsp. Cumin
- Salt & pepper to taste
For Toppings: (select as desired)
- Corn tortillas
- Onions, diced raw or sliced and sautéed (optional)
- Queso Fresco
- Tomatoes, diced
- Avocado, diced
- Romaine lettuce, thinly chopped
- Beans
- Fresh cilantro
- Salsa, (optional)
- Jalapeños (optional)
Instructions
- Marinade: Prep skirt steak by trimming fat off steak as desired. Add steak to marinating dish. Squeeze juice from 3 limes. Add in olive oil and spices. Allow steak to marinade and meld with flavors for at least two hours.
- Prep toppings for tacos in advance. Ideally, your toppings are ready to serve once the hot steak is ready. Dice fresh tomatoes, thinly slice lettuce, dice raw onions or caramelize on the stove. Rinse beans and dice avocado. Place in individual dishes for serving. Serve with optional salsa and jalapeños.
- Grill steak until desired temperature and doneness. Place cooked grilled steak on cutting board and cut into strips or small, bite size pieces. Serve on cutting board, along with toppings around it. Warm corn tortillas on the grill or in the oven. Pile cut steak into tortillas, add toppings, a squeeze of lime and enjoy!
