Seriously … No Baking Involved
There is seriously no baking involved with the No Bake Mixed Berry Ice Cream Loaf Cake. All you need is a loaf pan, graham crackers, vanilla ice cream, strawberry ice cream and a variety of berries! Yes, you will use a loaf pan, but you never pop it in the oven! By using graham crackers instead of cake, you can simply layer up your ingredients and your cake is ready to pop in the freezer. Assembling Your No Bake Ice Cream Loaf Cake
To start, line your loaf pan with parchment paper. There should be some parchment paper hanging over the sides of the pan. If it’s too large, you can fold it in the center so it fits in snugly.
Add a layer of graham crackers on the bottom. It should take about 12 rectangles to fully cover the bottom of the pan.
Now, it’s ice cream time. For this recipe, I purchased 1.5Q of vanilla and 1.5Q of strawberry ice cream from Whole Foods. Note that 1.5 quarts equals 6 cups or 3 pints of ice cream. This recipe uses about half of each tub of ice cream flavor. Alternatively, you can purchase two pints of each flavor, but will still have a little leftover either way.
To start, you will need to soften your ice cream a bit. If it’s not soft enough, you can pop it in the microwave for 30 seconds. This will allow you to easily scoop it out and smooth it into the loaf pan. Scoop out your vanilla ice cream into a minimum of 6 scoops, filling in gaps and ensuring you have an even, smooth layer.
Next, wash and dry your berries. Add in some blueberries and blackberries evenly over layer of vanilla ice cream, reserving the remaining berries for the topping. Lightly smash the berries into the ice cream layer. Add your next layer of 12 graham cracker rectangles evenly onto the vanilla/berry ice cream layer.
Now you’re ready for the strawberry ice cream layer, making sure it’s softened as well. Add in the same amount of strawberry ice cream, so a smooth even layer is formed. You should now have reached the top of the loaf pan. Fold over the sides of parchment paper over the top of the ice cream loaf cake and pop it in the freezer. Freeze for at least one hour before serving.
Dessert Ready To Serve Anytime
It’s time to serve your No Bake Mixed Berry Loaf Cake! Prepare the topping by washing, hulling and quartering some strawberries. Mix with the reserved berries and set aside.
Place your serving dish on the counter and remove the ice cream cake from the freezer. Carefully, remove the cake from your loaf pan by pulling up on the sides of the parchment paper. Once your cake is out of the loaf pan, you can pull the parchment paper off from the bottom and sides. Place your cake on the serving dish. Add the quartered strawberries along with the reserved blueberries and blackberries to the top of the cake. Voila! It’s ready to serve!

No Bake Mixed Berry Ice Cream Loaf Cake

- 1 ice cream scoop

Ingredients
- 1 1.5Q Vanilla ice cream
- 1 1.5Q Strawberry ice cream
- 1 pack Graham crackers, honey
- 1 pint blueberries
- 1 pint blackberries
- 1 pint strawberries
Instructions
- Line a loaf pan with parchment paper, ensuring there is paper hanging over the sides of the pan. If too large, you can fold parchment paper in the center so it fits in loaf pan snugly.
- Next, add a layer of graham crackers to the bottom of loaf pan. It should take about 12 rectangles to fully cover the bottom of the pan.
- For the ice cream layer, you will need to soften your ice cream. To speed up softening, pop the ice cream tub in the microwave for approximately 30 seconds. This will allow ice cream to scoop out easily into your loaf pan. Scoop out a minimum of 6-8 scoops of vanilla, filling in any gaps, and ensuring you have an even, smooth layer.
- Next, wash and dry your berries. Add in some blueberries and blackberries evenly over the layer of vanilla ice cream, reserving the remainder for the topping. Lightly smash in the berries into the ice cream layer.
- Add your next layer of graham crackers evenly onto the vanilla/berry ice cream layer.
- Now you're ready for the strawberry ice cream, ensuring it is equally softened. Add in the same amount of strawberry ice cream, so a second smooth and even layer is formed. You should now have reached the top of the loaf pan. Fold over the sides of parchment paper over the top of the ice cream loaf cake and pop it in the freezer.
- Prepare the topping by washing, hulling and quartering some strawberries. Mix with reserved blueberries and blackberries.
- Remove the ice cream loaf cake from the freezer and place next to your serving dish. Remove the cake by pulling up on the sides of parchment paper. Remove paper from sides and bottom of ice cream loaf cake. Place on your serving dish.
- For the topping, add the quartered strawberries along with the reserved blueberries and blackberries to the top of the cake. You cake is ready to serve!
