Healthy Breakfast in Minutes
Ready to bake them? Grab your parchment paper covered cookie sheet and ice cream scoop or spoon. I like to use an ice cream scoop to ensure my cookies come out more uniformly, but you can use a spoon as well. Place your cookie rounds onto the baking sheet. Pat down your cookies with the back of the scoop or spoon to make the cookies a bit flatter. Bake for 15 minutes or until golden brown. Serve and Enjoy!

Healthy Muesli Banana Cookies
Equipment
- 1 Mixing Bowl
- 1 Cookie Sheet
- 1 Ice Cream Scoop or spoon
- 1 Measuring spoons/cups
- 1 sheet Parchment Paper
Ingredients
- 2 whole Bananas (ripe)
- 1 cup Muesli Cereal (recommend Bob's Red Mill)
- 1/4 tsp. Ground Cinnamon
Instructions
- Preheat oven to 350 degrees. Cover cookie sheet with parchment paper. Using your mixing bowl, add both bananas to bowl and mash bananas until smooth. Add in 1 cup Muesli cereal and 1/4 tsp. cinnamon to bowl. Mix all 3 ingredients together until evenly blended. Using optional ice cream scooper (or 2 spoons), place uniform scoops of mixture onto prepared cookie sheet to form roughly 9 cookies. Using back of scooper, tap the top to flatten cookies down a bit for even cooking. Bake for 15 minutes or until golden brown. Cool on rack. Enjoy!
