Healthy Muesli Banana Cookies

Equipment

  • 1 Mixing Bowl
  • 1 Cookie Sheet
  • 1 Ice Cream Scoop or spoon
  • 1 Measuring spoons/cups
  • 1 sheet Parchment Paper

Ingredients

  • 2 whole Bananas (ripe)
  • 1 cup Muesli Cereal (recommend Bob's Red Mill)
  • 1/4 tsp. Ground Cinnamon

Instructions

  • Preheat oven to 350 degrees. Cover cookie sheet with parchment paper. Using your mixing bowl, add both bananas to bowl and mash bananas until smooth. Add in 1 cup Muesli cereal and 1/4 tsp. cinnamon to bowl. Mix all 3 ingredients together until evenly blended. Using optional ice cream scooper (or 2 spoons), place uniform scoops of mixture onto prepared cookie sheet to form roughly 9 cookies. Using back of scooper, tap the top to flatten cookies down a bit for even cooking. Bake for 15 minutes or until golden brown. Cool on rack. Enjoy!

You can find Bob's Red Mill Muesli at Whole Foods Market, Amazon or your favorite market! You can also substitute the old fashioned oatmeal for an equally satisfying treat!
