When are Figs in Season?
Figs are typically in season twice a year. Once in late Spring/early summer for Black Mission Figs and then late Summer/early Fall for the Brown Turkey fig and the Green Kadota fig. You can also try the Calimyrna or Adriatic varieties. Each fig variety has a slightly different flavor profile, but they share similar health benefits. They are a good source of vitamins, minerals, fiber, and antioxidants. Try them all to see which you prefer best! For this recipe, however, be sure to select larger, plumper figs since we will be stuffing them with some goat cheese and need their weight to stand up.
Fig Prep
To prepare your figs, you will need to wash them and pat them dry. Taking a sharp knife, gently slice off the stem to make the bottom flat. You should be able to stand the fig upright. Next, take your knife and carefully make one slit about halfway down the center towards the stem. Repeat on the opposite side, forming an X. Be sure not to slice all the way down to the bottom of the fig, or else your figs will open too much without uniformity.
Now your figs are ready for assembly. Slice your goat cheese into circles. Cut your circles in half, creating semicircles. Add a semicircle of goat cheese into a slot of each fig. Transfer your figs to your serving dish.
Naturally Sweet and Nutty
These figs are naturally sweet, from the figs themselves, the local honey and chevre with honey variety of goat cheese. Add your topping, by drizzling the honey in a zig zag motion for good presentation. You only need a little bit of honey on the figs, so don’t use a heavy hand.
Next, it’s time to crush your pistachios. In a ziploc bag, add your pistachios and seal ziploc. Using a mallet, crush the pistachio nuts so they are crushed into a mixture of chunky and fine pieces. Open ziploc and sprinkle the nuts on top and around the figs for pretty presentation. Done!
Your Honey Drizzled Figs with Goat Cheese and Pistachio are ready to serve! Enjoy!
