Honey Drizzled Figs with Goat Cheese and Pistachio

1 Serving dish
- 8 Fresh figs, larger variety
- 2 oz. Chevre with Honey Goat Cheese
- 1/4 cup Pistachios, unsalted and roasted
- Honey
To prepare the figs, wash them and pat them dry. Taking a sharp knife, gently slice off the stem to make the bottom flat. You should be able to stand the fig upright. Next, take a sharp knife and carefully make one slit halfway down the center towards the stem. Repeat on the opposite side, forming an X. Be careful not to slice all the way down to the bottom of the fig stem, otherwise figs will fan out excessively, be hard to stuff and will lack uniformity.
Now your figs are ready for assembly. Slice your goat cheese into circles. Cut your circles in half, creating semicircles. Add a semicircle of goat cheese into a slot of each fig. Transfer your figs to a serving dish.
Drizzle honey on top of figs in a zig zag motion for good presentation. You only need a little bit of honey on the figs, so don't use a heavy hand.
Add the pistachios to a ziploc bag. Using a mallet, crush the pistachio nuts so they are crushed into a mixture of chunky and fine pieces. Sprinkle the crushed nuts on top and around the figs for pretty presentation. Serve and enjoy!
