It’s always a great day when you wake up to a warm, cozy breakfast treat. Enter Summer Berry Oatmeal Bake, your new go-to oatmeal bake during the summer or anytime of the year when berries are available.
Summer Berry Oatmeal Bake, however, is not your typical sugar laden morning treat. This healthy dish is naturally sweetened with only good ingredients — fresh fruits and a small amount of 100% pure maple syrup. It has no added refined sugar and contains no added oil (except for cooking spray on bottom of pan, if desired). Just wholesome goodness to start your day.
Additionally, this dish is gluten-free with the addition of oats, which are naturally gluten-free. Be careful, however, for possible cross-contamination with other ingredients containing gluten during mill processing. If you are sensitive to gluten, it’s safer to purchase high quality oats labelled as “gluten-free”, such as Bob’s Red Mill.
There is one additional “secret” ingredient to this dish that makes it sweet and moist. The addition of bananas — three to be exact! Bananas are a fabulous way to add natural sweetness to baked goods. Remember, the riper your bananas, the sweeter they will be. So try to pick ones that have some brown spots for a sweeter addition.
Once you have gathered your ingredients, this delicious dish comes together quickly. Grab your baking pan and coat it with cooking spray. I love the Caraway Rectangular Pan. Baked goods slide right off the pan, clean and moist. It is a pretty pan that can be used as a serving dish right out of the oven! Plus, it’s healthy nonstick ceramic coating is free of toxic chemicals, giving you peace of mind. The pan’s slate blue color complements the berries so nicely!
Now, it’s time to prepare the batter. Peel your bananas and mash them in a large mixing bowl. Next, in a small bowl, whisk the eggs and add them to the mashed bananas in the larger larger bowl. Add in the maple syrup and vanilla to the mashed banana mixture. Mix well.
Next, add in the oats and baking soda, mixing all ingredients well. Take 1/4 cup of each berry and add them to the mix. You want to smash in the berries to add some of their sweet juices to the batter. You can do this by using a fork, mashing berries onto the side of your mixing bowl to create some juicy chunks of berry into your oat mixture. Give it a few swirls with your spatula and then pour the oat mixture into your prepared pan. Scatter remaining berries on top of mixture. Sprinkle the top with cinnamon.
Bake in the oven at 350 degrees for approximately 30 minutes or until sides are brown. Before you know it, your delicious Summer Berry Oatmeal Bake will be ready, filling your kitchen with delicious scents! Cut into rectangles and serve with an optional side of whipped cream or creme fraiche. Save the extras for a snack over the next few days! Enjoy!

Summer Berry Oatmeal Bake
Equipment
- 1 9 x 13 baking pan (smaller pan can be used)
- 1 Large mixing bowl
- 1 Small bowl
- 1 Set measuring cups
- 1 Measuring teaspoon
- 1 Fork
Ingredients
- 3 Bananas, mashed
- 2 Large eggs, whisked
- 1/8 cup Maple syrup
- 2 tsp. Vanilla
- 3 cups Old fashioned oats
- 2 tsp. Baking soda
- 1 cup Blueberries
- 1 cup Raspberries
- 1 cup Blackberries
- Cinnamon, ground
- Cooking spray
Instructions
- Lightly spray 9 x 13 pan with cooking spray. Mash all three bananas in large mixing bowl. Whisk eggs in separate bowl. Add in eggs and remaining wet ingredients to mashed banana. Mix well. Add in remaining dry ingredients and mix all ingredients well. Take 1/4 cup of each berry and add to mix. With a fork, mash berries into mix, using the side of your mixing bowl to create some juicy chunks of berry in oat mixture. Swirl the batter with spatula a few times to incorporate berries and juices.
- Pour oat mixture into prepared pan. Scatter remaining berries on top of mixture. Sprinkle top with cinnamon.
- Bake at 350 for 30 mins. Serve with optional side of whipped cream or creme fraiche.
