Summer Berry Oatmeal Bake

Equipment

  • 1 9 x 13 baking pan (smaller pan can be used)
  • 1 Large mixing bowl
  • 1 Small bowl
  • 1 Set measuring cups
  • 1 Measuring teaspoon
  • 1 Fork

Ingredients

  • 3 Bananas, mashed
  • 2 Large eggs, whisked
  • 1/8 cup Maple syrup
  • 2 tsp. Vanilla
  • 3 cups Old fashioned oats
  • 2 tsp. Baking soda
  • 1 cup Blueberries
  • 1 cup Raspberries
  • 1 cup Blackberries
  • Cinnamon, ground
  • Cooking spray

Instructions

  • Lightly spray 9 x 13 pan with cooking spray. Mash all three bananas in large mixing bowl. Whisk eggs in separate bowl. Add in eggs and remaining wet ingredients to mashed banana. Mix well. Add in remaining dry ingredients and mix all ingredients well. Take 1/4 cup of each berry and add to mix. With a fork, mash berries into mix, using the side of your mixing bowl to create some juicy chunks of berry in oat mixture. Swirl the batter with spatula a few times to incorporate berries and juices.
  • Pour oat mixture into prepared pan. Scatter remaining berries on top of mixture. Sprinkle top with cinnamon.
  • Bake at 350 for 30 mins. Serve with optional side of whipped cream or creme fraiche.

Notes

Note: You may use a smaller pan to create thicker bars, if desired. Monitor cooking time for desired doneness.
