Fresh ingredients include herbs, butter, fresh garlic, and fresh lemon — which are often in the fridge. An AeroGarden Harvest is an easy and fun way to ensure you have fresh herbs year round, saving you time and money. Easy pantry staples such as chicken broth, olive oil, and dry thyme are often on hand. The simple ingredients allow you to prepare this soup at a moments notice! Make a big batch and enjoy it during the week!
First, you’ll need a good stock pot to make your soup. One favorite is Caraway Home’s Dutch Oven, which is large enough for all the ingredients, comes in several colors and is pretty enough to serve in! You will also need a good blender to achieve a good, smooth texture for your soup. The Vitamix Blender is a favorite and highly recommended, which restaurant professionals actually use for making soups, sauces, dressings, blended cocktails and is a true winner!
To get started, drizzle olive oil in a large pot over medium heat. Add your whole garlic cloves and peas to the pot, stirring and allowing the garlic to simmer in the olive oil. No need to mince the garlic since it will be blended later. Next, add in your butter. This allows the butter to slowly melt into the peas without burning. Add the fresh dill and basil leaves to your pea mixture, tossing the peas with the herbs in the pot so the herbs are evenly incorporated. The fresh herbs will infuse the soup with a burst of springtime flavors. Next, add in the chicken broth to the pot. Bring the pea soup mixture to a gentle boil. Reduce the heat and let it simmer until the peas are tender for an additional 7-10 minutes.
Now you’re ready to blend your soup. Carefully transfer the soup mixture from your pot to the blender. Conveniently, the full amount of soup should fit in your Vitamix blender, but you may also blend in batches if using a different one. Blend your ingredients until smooth. Your Herby Spring Pea Soup will have a wonderful velvety texture, showcasing the vibrant green color of the peas and little bits of herbs. You will notice there is no need for cream or milk, allowing the veggies to take center stage!
Pour your blended soup back into your pot. Season the soup with salt and pepper according to your taste preferences. Squeeze in the juice of one lemon and stir. If additional lemony flavor is desired, you can squeeze in another half lemon juice. Adjust the seasoning as needed to achieve the right balance of flavors. Gently simmer on low until ready to serve.
