Ingredients
6cupsfresh or frozen sweet peas (32 oz.)
2garlic cloves, whole
4cupschicken broth
1/4cupfresh basil leaves
1/4 cupfresh dill, chopped
1/4tspdry thyme leaves
1tbspbutter
1tbspolive oil
1 - 1.5lemons, juiced
fresh mint, for garnish
croutons, optional garnish
salt & pepper, to taste
Instructions
Drizzle olive oil in a large pot over medium heat. Add garlic, butter and peas, stirring together frequently until butter slowly melts into peas. No need to mince the garlic since it will be blended later.
Add the basil leaves and dill to the pea mixture in the pot, tossing peas so herbs are evenly incorporated. These fresh herbs will infuse the soup with a burst of springtime flavors.
Next, pour the chicken broth into the pot. Bring the mixture to a gentle boil, then reduce the heat and let it simmer until peas are tender for an additional 7-10 minutes.
Transfer soup mixture from your pot to your blender. The whole amount in the pot should fit in your blender, but you may also blend in batches if needed. Blend until smooth and creamy. Your Herby Spring Pea Soup will have a smooth, velvety texture, showcasing the vibrant green color of the peas and little bits of herbs.
Pour your blended soup back into your stock pot. Season the soup with salt and pepper according to your taste preferences. Squeeze in the juice of one lemon and stir. If additional lemony flavor is desired, you can squeeze in another half lemon juice. Adjust the seasoning as needed to achieve the right balance of flavors.
Ladle your Herby Spring Pea Soup into bowls. Sprinkle fresh mint on top for fresh burst of more herby flavor. Top with optional croutons for a bit of crunch!
