Perfect Pumpkin Muffin Tops

Equipment

  • Muffin Top Pan
  • 2 Mixing Bowls, medium and large
  • Spoon
  • Measure cups
  • Measuring spoons

Ingredients

  • 1/2 cup unbleached white flour
  • 1/2 cup whole wheat flour
  • 3/4 tsp salt
  • 1 1/2 tsp baking powder
  • 3/4 tsp baking soda
  • 1/2 tsp allspice
  • 1/2 tsp cinnamon
  • 1/4 tsp pumpkin pie spice
  • 1/8 tsp nutmeg
  • 1/4 cup sugar
  • 1 1/2 tsp butter
  • 1 egg
  • 1/3 cup oat milk
  • 1/4 cup maple syrup
  • 1/2 cup pumpkin puree, canned
  • powdered sugar, as desired

Instructions

  • Preheat oven to 350 degrees. Lightly grease your muffin top pan with butter, oil or cooking spray and set aside.
  • In a large bowl, mix all dry ingredients together and set aside. Next, in a medium bowl, mix the butter and sugar until blended. Add all remaining wet ingredients and mix together until well blended. Add wet ingredients to dry ingredients. Mix until smooth.
  • Pour prepared batter evenly into each muffin top. Bake for 30 minutes or until golden.
  • Remove from oven. Allow a few minutes to cool. Remove muffin tops from the pan and cool on a wire rack. Sprinkle powdered sugar on top. Serve and enjoy! Makes 6 muffin tops.
