Strawberry Rhubarb Chia Seed Pudding

Ingredients

  • 3 tbsp chia seeds
  • 1 cup almond milk
  • 1 tsp maple syrup
  • 10 strawberries, chopped
  • 1 stick rhubarb, chopped
  • 1 cup water

Instructions

  • Combine ingredients for chia seed pudding and set for a minimum of one hour.
  • Prepare compote by boiling strawberries, rhubarb and water until softened and blend together.
  • Top chia seed pudding with strawberry rhubarb compote and top with optional toasted almond! Enjoy!
