Tuscan Chicken Thighs
White beans, garlic, lemon and fresh thyme add creamy flavor to this quick and easy dish!

- 9 individual Chicken thighs
- 1 can Cannellini beans (15.5 oz)
- 1 Lemon, sliced in circles
- 2 cloves Garlic
- Paprika, to taste
- 2 tbsp. Olive oil, extra virgin
- 1/2 cup Chicken broth
- Fresh thyme, several sprigs
- Salt and pepper, to taste
Prepare chicken thighs by trimming fat off with a sharp knife. Rinse thighs in colander and pat dry. Sprinkle salt, pepper and paprika onto thighs, as desired.
Heat olive oil in pan on medium high heat and add in chopped garlic. Once garlic is heating up, add in chicken thighs to pan, searing both sides of chicken until a golden crust forms. Add chicken broth to pan with chicken and simmer.
Top chicken with fresh thyme sprigs and sliced lemon rounds. Rinse beans and add around chicken. and then simmer on low heat for additional 20 minutes for flavors to meld.
